  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 1 liter chicken stock
  • 250g cooked turkey or chicken
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • 1 tbsp fresh thyme or 1 tsp dried thyme
  • Fresh parsley (for garnish)

Instructions

  1. In a large Dutch oven, melt butter over medium heat. Add leeks, carrots, celery, and thyme; sauté until softened.
  2. Stir in flour and gradually add chicken stock while scraping any bits from the bottom of the pot. Season with salt and pepper.
  3. Add potatoes, cooked turkey, and bay leaves. Stir well and bring to a gentle boil.
  4. Transfer to an oven preheated at 180C/350F and cook uncovered for about 45 minutes until everything is tender.
  5. Optional: Stir in cream before serving and garnish with fresh parsley.
