  • 1 tablespoon butter
  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tablespoons flour
  • 1 liter chicken stock
  • 250g cooked turkey or chicken
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • Fresh thyme and parsley
  • Salt and pepper to taste

Instructions

  1. In a large Dutch oven over medium heat, melt the butter.
  2. Add chopped leeks, carrots, celery, and thyme; cook for about 5 minutes until tender.
  3. Stir in garlic and cook for another minute.
  4. Sprinkle flour over veggies and mix well; gradually add chicken stock while stirring.
  5. Bring to a boil, then season with salt and pepper.
  6. Add potatoes, turkey, and bay leaves; stir well.
  7. Cover the pot and transfer it to a preheated oven at 180C/350F for about 45 minutes.
  8. If desired, stir in cream before serving, garnished with parsley.
