  • 2 lb jackfruit pieces
  • 1 lb gnocchi
  • 1 yellow onion (diced)
  • 2 carrots (sliced)
  • 3 cloves garlic (minced)
  • 6 cups vegetable stock
  • 1/3 cup apple vinegar
  • 8 sprigs fresh thyme
  • 2 bay leaves
  • 1 tbsp smoked paprika
  • 1/3 cup whole wheat pastry flour
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed)
  • Sea salt + black pepper to taste
  • 1/3 cup fresh Italian parsley (roughly chopped)

Instructions

  1. In a heavy-bottom dutch oven over medium-low heat, sauté the diced onion and sliced carrots until the onion is translucent.
  2. Stir in minced garlic and cook briefly before adding jackfruit, thyme sprigs, bay leaves, and apple vinegar. Simmer until most vinegar evaporates.
  3. Whisk together whole wheat pastry flour with vegetable stock in a separate bowl, then pour into the pot with jackfruit. Add smoked paprika and cloves.
  4. Let everything simmer for about 45 minutes until jackfruit is fork-tender.
  5. Stir in gnocchi, diced tomatoes, and green peas; cook until gnocchi float to the top.
  6. Remove thyme sprigs and bay leaves; season with salt and pepper. Stir in fresh parsley before serving.
