  • 24 ounces fresh green beans
  • 4 tablespoons unsalted butter
  • 8 ounces baby bella mushrooms
  • 1 tablespoon minced garlic
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 4 medium shallots
  • Creole Cajun seasoning (to taste)
  • 1/2 cup freshly grated parmesan cheese

Instructions

  1. Heat vegetable oil in a deep skillet over medium-high heat. Add sliced shallots and fry until golden brown and crispy. Remove and set aside.
  2. Blanch trimmed green beans in boiling salted water for about 5 minutes. Drain well.
  3. In another pan, melt butter over medium heat. Sauté mushrooms until golden brown. Add garlic, then sprinkle flour and stir for 2 minutes.
  4. Gradually add chicken broth, lemon juice, Dijon mustard, Worcestershire sauce, thyme, red pepper flakes, nutmeg, salt, black pepper, and heavy cream. Simmer until thickened.
  5. In a bowl, mix blanched green beans with the creamy sauce. Transfer to a baking dish and top with half the parmesan cheese and crispy shallots.
  6. Bake in a preheated oven at 350°F for about 20 minutes until bubbly.
