  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear seasoned chicken in a skillet over medium heat for 3–4 minutes per side until golden brown.
  3. In a bowl, mix BBQ sauce and honey; set aside.
  4. Toast uncooked rice in the skillet for 1–2 minutes.
  5. Pour chicken broth and half of the BBQ mixture into the skillet; stir to combine.
  6. Add seared chicken back into the skillet and pour remaining BBQ sauce on top. Cover and simmer on low for about 15 minutes.
  7. If using mixed vegetables, add them now; cover and cook for an additional 5 minutes until tender.
  8. Let sit for 5 minutes before serving; garnish with chopped green onions.
