  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 2 cups cooked white rice
  • 1 avocado
  • 1 cucumber (sliced)
  • 1 cup cooked edamame
  • Optional: Sriracha mayo for drizzling

Instructions

  1. Cut salmon into 1-inch cubes, if desired, for easy cooking.
  2. In a bowl, whisk together soy sauce, honey, sriracha, garlic, and water to make the marinade.
  3. Add salmon cubes to the marinade and let it soak for at least 20 minutes.
  4. Heat oil in a skillet over medium-high heat and cook marinated salmon for 2-3 minutes on each side until golden brown.
  5. Pour any remaining marinade into the skillet and simmer until slightly thickened.
  6. Assemble bowls with cooked rice as a base, topped with salmon, avocado, cucumber, edamame, and drizzle with sriracha mayo.
