  • 1 can (13.5 oz) full-fat coconut milk
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp curry powder
  • 1 cup low-sodium vegetable broth
  • 2 bell peppers, chopped
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Set your Instant Pot to sauté mode. Add oil and sauté chopped onions until translucent (about 3-4 minutes).
  2. Stir in garlic and ginger; cook for an additional minute until fragrant.
  3. Add cubed beef and brown on all sides (5-7 minutes).
  4. Mix in curry powder, salt, and pepper until the beef is coated.
  5. Pour in coconut milk and vegetable broth, stirring well.
  6. Add bell peppers and give it a gentle stir.
  7. Seal the lid, set to high pressure for 35 minutes. Allow natural pressure release for 10 minutes before quick releasing.
