- ½ head cabbage, roughly chopped
- 4 potatoes, peeled and sliced into ¼-inch rounds
- 1 medium onion, sliced
- ½ cup chicken stock
- 1 ½ teaspoons thyme
- 1 teaspoon smoked paprika
- ½ teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper for the dry rub.
- In a large oven-safe sauté pan, sear the chicken thighs in reserved fat until golden brown on both sides.
- Sauté cabbage in the same pan for 2–3 minutes until slightly wilted.
- Add sliced potatoes and onions along with chicken stock; stir well.
- Return any crispy bacon to the pan and arrange seared chicken on top.
- Bake for about 45–50 minutes or until chicken reaches an internal temperature of 165°F (75°C).
