  • 8 chicken thighs (or preferred cuts)
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix thyme, smoked paprika, salt, onion powder, garlic powder, and black pepper for the dry rub.
  3. In a large oven-safe sauté pan, sear the chicken thighs in reserved fat until golden brown on both sides.
  4. Sauté cabbage in the same pan for 2–3 minutes until slightly wilted.
  5. Add sliced potatoes and onions along with chicken stock; stir well.
  6. Return any crispy bacon to the pan and arrange seared chicken on top.
  7. Bake for about 45–50 minutes or until chicken reaches an internal temperature of 165°F (75°C).
