  • 1 tablespoon olive oil
  • 200 grams ground beef
  • 400 grams lean ground beef
  • 1 large egg
  • 100 grams crustless bread
  • 125 ml white grape juice
  • 100 grams onion (minced)
  • 4 garlic cloves (minced)
  • ½ teaspoon ground cumin
  • 1 teaspoon dried oregano (+ extra to serve with)
  • 2 teaspoons dried parsley (or fresh minced)
  • 1 teaspoon fine sea salt (+ extra for the sauce)
  • ½ teaspoon ground pepper (+ extra for the sauce)
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 2 cups hot water or stock (vegetable, beef, or chicken stock)
  • 810 tablespoons lemon juice

Instructions

  1. In a large bowl, combine ground beef, minced onion, garlic, egg, soaked crustless bread, cumin, oregano, parsley, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small balls about 1 inch in diameter and place them on a plate.
  3. Heat olive oil in a skillet over medium heat and cook the meatballs in batches until golden brown on all sides.
  4. In the same skillet, melt butter and whisk in flour until smooth. Gradually add hot water or stock while stirring continuously until thickened. Stir in lemon juice and season with salt and pepper.
  5. Return the meatballs to the skillet and simmer for about 5 minutes before serving.
