  • 4 cups Rice Krispies cereal
  • 3 cups mini vegan marshmallows
  • 2 tablespoons unsalted butter
  • 1 cup fresh blueberries
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a large pot over medium-low heat, melt the unsalted butter. Add in the mini vegan marshmallows and stir until melted and smooth.
  2. Remove from heat and fold in the Rice Krispies cereal until evenly coated, then gently add fresh blueberries.
  3. Lightly grease a 9×9-inch baking pan or line it with parchment paper. Transfer the mixture and press down gently without packing too tightly.
  4. Let cool at room temperature for about 30 minutes until firm.
  5. For the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over cooled bars once set.
  6. Allow glaze to set for 10–15 minutes before cutting into squares.
