  • ½ cup panko breadcrumbs
  • 1 egg

  • 2 tablespoons soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon brown sugar
  • 1 tablespoon sesame oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 green onions, finely chopped
  • ¼ cup soy sauce for glaze
  • 2 tablespoons honey or brown sugar for glaze
  • 1 tablespoon gochujang for glaze
  • 1 tablespoon rice vinegar for glaze
  • 1 tablespoon sesame oil for glaze
  • 1 teaspoon garlic, minced for glaze
  • 1 teaspoon ginger, minced for glaze
  • 1 teaspoon cornstarch mixed with 2 tablespoons water for glaze
  • ½ cup mayonnaise for spicy mayo dip
  • 1 tablespoon gochujang for spicy mayo dip
  • 1 tablespoon lime juice for spicy mayo dip
  • 1 teaspoon honey for spicy mayo dip
  • ½ teaspoon garlic powder for spicy mayo dip
  • Sesame seeds for garnish
  • Chopped green onions for garnish

Instructions

  1. In a large bowl, mix ground beef (or chicken), panko breadcrumbs, egg, garlic, soy sauce, gochujang, and seasonings until just combined.
  2. Form mixture into meatballs about 1 to 1.5 inches in diameter.
  3. Cook meatballs by pan-frying until browned and cooked through or bake in the oven.
  4. Prepare the glaze by whisking together soy sauce, honey (or brown sugar), gochujang, rice vinegar, sesame oil, garlic, ginger, and corn starch in a saucepan over medium heat until thickened.
  5. Mix mayonnaise with gochujang, lime juice, and garlic powder for the spicy mayo dip.
  6. Toss cooked meatballs in the glaze and serve hot with the spicy mayo dip.
