  • 1 box (3.4 oz) instant lemon pudding mix
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 cups powdered sugar
  • 23 tbsp fresh lemon juice (for glaze)
  • Optional: 1 tbsp milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a bowl, combine yellow cake mix, instant lemon pudding mix, eggs, vegetable oil, water, fresh lemon juice, and zest. Mix on medium speed for about 2 minutes until smooth.
  3. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  4. While the cake bakes, whisk together powdered sugar and fresh lemon juice until smooth for the glaze.
  5. Once baked, poke holes in the warm cake and pour the glaze over it.
