  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, ½ cup sugar, baking powder, melted butter, and salt until crumbly. Reserve ½ cup for topping.
  2. Press remaining mixture into an 8×8-inch baking pan lined with parchment paper. Bake for about 12-15 minutes until lightly golden.
  3. In another bowl, whisk together eggs, remaining sugar, flour, lemon juice, and zest until smooth. Pour over the baked crust.
  4. Sprinkle reserved crumb mixture on top and bake for an additional 20-25 minutes until the filling is set and golden.
  5. Allow to cool completely before refrigerating for at least one hour before slicing.
