Ingredients

  • rolled oats
  • all-purpose flour
  • brown sugar
  • butter (or dairy-free alternative)
  • fresh lemons (for juice and zest)
  • granulated sugar
  • cornstarch
  • water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, combine rolled oats, flour, brown sugar, salt, and melted butter until crumbly. Press half into the bottom of the prepared pan.
  3. Whisk together lemon juice, granulated sugar, cornstarch, and water in another bowl until smooth. Pour over the crust.

  5. Bake for about 38 minutes until bubbly and golden brown. Allow to cool before slicing.
