  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1 pound ground beef (or ground turkey)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • Shredded cheddar cheese
  • Sour cream
  • Fresh cilantro
  • Diced tomatoes
  • Lime wedges

Instructions

  1. Preheat your oven to 425°F (220°C). Toss diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper in a bowl. Spread on a baking sheet lined with parchment paper and roast for 25-30 minutes until golden brown.
  2. In a skillet over medium-high heat, brown the ground beef (or turkey) for about 5-7 minutes. Drain excess fat, then add taco seasoning and water. Simmer until thickened.
  3. In a small pot over low heat, warm black beans and corn.
