  2. Add diced onion, green bell pepper, and celery to the roux. Sauté for about 5–7 minutes until softened.
  3. Stir in minced garlic, cajun seasoning, dried thyme, and bay leaf. Cook for an additional minute.
  4. Pour in seafood or chicken stock while stirring to avoid lumps. Bring to a boil.
  5. Add the shrimp and crabmeat (and oysters if using). Simmer for another 10–15 minutes until seafood is cooked through.
  6. Remove bay leaf and adjust seasoning with salt and pepper. Serve hot over cooked white rice.
