  • 1 cup breadcrumbs (plain or seasoned)
  • 2 large eggs (room temperature)
  • 1 medium onion (finely chopped)
  • 1/3 cup ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 2 cups mashed potatoes (prepared)
  • 1 cup cheddar cheese (shredded)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Sauté chopped onions in a skillet until soft, about 5 minutes.
  3. In a large bowl, mix ground beef, breadcrumbs, eggs, ketchup, Worcestershire sauce, sautéed onions, salt, pepper, and garlic powder until just combined.
  4. Grease a muffin tin and fill each cup three-quarters full with the meat mixture.
  5. Bake for 20-25 minutes until golden brown and cooked through.
  6. Prepare mashed potatoes with cheddar cheese and pipe onto cooled meatloaf cupcakes.
