  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. In a large bowl, combine sliced onions, bell peppers, cherry tomatoes, garlic, olives, and capers (if using). Season with olive oil, oregano, salt, and pepper; toss until well coated.
  3. Spread the vegetable mixture evenly in the baking dish and place fish fillets on top. Squeeze fresh lemon juice over the fish and sprinkle with lemon zest.
  4. Bake uncovered for about 20–25 minutes or until the fish flakes easily with a fork.
  5. Garnish with fresh parsley and serve with lemon wedges.
