  • 1 pint fresh blueberries
  • 1 cup icing sugar
  • 1 tablespoon fresh lemon juice

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk eggs, cooking oil, and vanilla essence until combined.
  3. In another bowl, mix flour, salt, baking powder, and baking soda.
  4. Grate zucchini and fold it into the wet mixture along with sugar and blueberries.
  5. Gradually add dry ingredients to wet mixture and stir gently until just combined.
  6. Pour into a greased loaf pan and bake for about 50 minutes or until a toothpick comes out clean.
