  • 2 tablespoons holiday spice mix
  • 1/3 cup white sugar
  • 1 cup fruitcake fruit blend or your choice of dried fruit
  • 1/2 cup candied mixed peel
  • 1 large egg
  • 1 cup buttermilk or plain yogurt
  • 3/8 cup melted butter
  • Dust with non-melting sugar or powdered sugar

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and holiday spice mix.
  3. In another bowl, beat egg with buttermilk and melted butter until smooth.
  4. Combine wet and dry ingredients gently until just mixed—don’t overmix!
  5. Fold in dried fruit blend and candied peel.
  6. Spoon batter into greased muffin tins about two-thirds full.
  7. Bake for 20 minutes or until golden brown.
  8. Cool slightly before dusting with powdered sugar.
