- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- In a large skillet over medium heat, warm olive oil and sauté sausage rounds until browned (4–5 minutes). Remove from the pan.
- In the same skillet, add onion and bell pepper; sauté for 3–4 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
