  • 1 lb chicken or turkey sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet over medium heat, warm olive oil and sauté sausage rounds until browned (4–5 minutes). Remove from the pan.
  2. In the same skillet, add onion and bell pepper; sauté for 3–4 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in smoked paprika and black pepper before adding uncooked rice; toast for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; mix well and return browned sausage to the pan.
  5. Bring to a boil, cover, reduce heat to low, and simmer for 20–22 minutes until rice is tender.
  6. Let rest for 5 minutes before fluffing with a fork and serving garnished with parsley.
