  • 14 oz turkey sausage or chicken sausage, sliced into ¼-inch rounds
  • 2 cloves garlic, minced
  • 3 cups elbow macaroni (or any short pasta)
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter

Instructions

  1. In a large pot or deep skillet, heat olive oil over medium heat. Add the sliced turkey or chicken sausage and cook until browned (about 4-5 minutes). Remove from pot and set aside.
  2. In the same pot, sauté minced garlic for 30 seconds until fragrant.
  3. Add elbow macaroni, chicken broth, whole milk, smoked paprika, black pepper, and salt. Bring to a gentle boil, then lower heat to medium-low and cover. Let simmer for about 8-10 minutes until pasta is tender.
  4. Reduce heat to low and stir in cheddar cheese, mozzarella cheese, and butter until melted and creamy.
  5. Return the browned sausage to the pot and stir well to combine. Heat for an additional minute before serving.
