  • 1 medium onion
  • 2 tablespoons avocado oil
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. 1. Allow the chicken to rest at room temperature for 30-60 minutes to enhance crispiness.
  2. 2. Preheat your oven to 425ºF (218ºC).
  3. 3. Place the chicken breast side up in a roasting pan and pat the skin dry. Stuff the cavity with onion halves.
