  • 2 cups blackberries
  • ½ cup water
  • 1 tablespoon lemon juice
  • ¾ cup sugar
  • 8 ounces goat cheese
  • 2 lemons, zested
  • 4 teaspoons raw sugar
  • 2 teaspoons fresh thyme, minced
  • 1 egg

Instructions

  1. Cook blackberries, water, lemon juice, and sugar in a saucepan over medium heat until thickened (about 20–30 minutes). Smash berries while cooking.
  2. Thaw the puff pastry for 20–25 minutes; roll out each sheet into a rectangle.
  3. Spread goat cheese and cooled blackberry filling on the pastry. Cut into strips, fold in half, and twist gently.
  4. Preheat oven to 400°F (200°C). Brush twists with egg wash, sprinkle with lemon-thyme sugar, and bake for 16–18 minutes until golden brown.
