  • 3/4 cup granulated sugar

  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla
  • 1/2 cup granulated sugar for topping
  • 1/2 cup brown sugar for topping
  • 1/4 cup chopped pecans for topping
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together flour, baking powder, sugar, and spices.
  3. In another bowl, combine pumpkin puree, milk, melted butter (or oil), and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients to form a thick batter and transfer it to an 8-inch casserole dish.
  5. Mix granulated sugar, brown sugar, and chopped pecans in a separate bowl; sprinkle over the batter.
  6. Carefully pour hot water over the top—do not stir!
  7. Bake for 40 minutes until set in the center.
  8. Allow cooling for 5-10 minutes before serving.
