  • 41 grams of egg whites
  • 45 grams of egg whites
  • 115 grams of granulated sugar
  • 79 grams of water
  • dash of cream of tartar or lemon juice for stabilizing
  • Orange and brown powdered or gel food coloring
  • 1 cup all-purpose flour
  • 1/4 cup coconut oil
  • 1/4 tsp salt
  • 4 tbsp ice cold water
  • 1/2 cup organic shortening or vegan butter
  • 3/4 cup + 2 tbsp confectioners sugar
  • Seeds from 1/4 vanilla bean (or gf vanilla)
  • pinch of salt
  • dash of non-dairy milk
  • 1 tbsp pumpkin puree
  • 2 tsp pumpkin pie spice
  • 1/2 tsp vanilla
  • Granulated sugar and cinnamon for dusting (optional)

Instructions

  1. Prep your equipment by cleaning mixing bowls and measuring ingredients accurately.
  2. Prepare the macaron batter by sifting almond meal and powdered sugar together, then gently folding in egg whites and food coloring.
  3. Create a sugar syrup and whisk remaining egg whites until soft peaks form; combine them for meringue.
  4. Fold meringue into dry ingredients carefully until just incorporated.
  5. Pipe small rounds onto a lined baking sheet and let them rest before baking at 300°F for 12-14 minutes.
  6. While cooling, prepare pie crust cutouts and bake until golden brown.
  7. Assemble macarons with pumpkin spice frosting and pie crust cutouts on top.
