  • 1 pound sweet cherry tomatoes
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Salt and black pepper
  • 8 ounces ricotta
  • 1 bunch fresh basil (divided)
  • 1 crusty bread loaf
  • Balsamic glaze for drizzling

Instructions

  1. Preheat your oven to 400ºF. Toss cherry tomatoes with 1 tablespoon of olive oil, 2 minced garlic cloves, salt, and pepper in a baking dish. Roast for about 20 minutes until they burst.
  2. While the tomatoes roast, blend together ricotta, remaining garlic, 1 tablespoon olive oil, and half a cup of fresh basil until smooth.
  3. Slice the bread into half-inch slices. Mix the last tablespoon of olive oil with the remaining minced garlic; brush on both sides of each slice. Toast in the oven for about 10-12 minutes until golden.
  4. Assemble by spreading ricotta on each toast, top with roasted tomatoes and fresh basil, then drizzle with balsamic glaze.
