  • 1 head roasted garlic (1215 cloves)
  • ¼ cup salted butter
  • ½ cup vegetable or chicken broth
  • ½ cup heavy cream
  • Salt and black pepper to taste
  • Fresh thyme and parsley for garnish

Instructions

  1. Spray the inside of a three-quart slow cooker with cooking spray. Add cut potatoes, roasted garlic, butter, thyme, salt, pepper, and broth. Stir gently.
  2. Cover and cook on high for 4-5 hours or low for 7-8 hours until potatoes are tender.
  3. Once soft, add heavy cream gradually to reach your desired creaminess. Mash until smooth using a hand mixer or potato masher.
  4. Taste and adjust seasoning if necessary, then garnish with chopped parsley before serving.
