  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and quartered)
  • kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • fresh ground pepper

  1. Preheat the oven to 375°F. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about 1 hour until soft.
  2. In a large pot, cover red potatoes with cold water and add salt. Boil until fork-tender (about 15 minutes). Drain well.
  3. Squeeze roasted garlic cloves into the pot with the potatoes.
  4. Warm half and half with butter until melted; pour into the potato mixture. Season with pepper and additional salt as needed.
  5. Mash until creamy but still slightly chunky for texture.
