  • 2 large salmon filets
  • 8 ounces dried pasta
  • 2/3 cup pesto (jarred or homemade)
  • 1/4 cup grated Parmesan cheese
  • 12 teaspoons olive oil
  • 1 teaspoon lemon juice (from 1/2 lemon)
  • Kosher salt and black pepper

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper and place the salmon filets on it. Brush with olive oil and lemon juice, then season with salt and pepper.
  2. Roast the salmon in the cold oven for about 20 minutes until cooked through.
  3. Meanwhile, boil salted water in a pot and cook the pasta until al dente. Reserve some pasta water before draining.
  4. In the same pot, combine the drained pasta with pesto and Parmesan cheese. Mix well and add reserved pasta water as needed.
  5. Flake the roasted salmon into bite-sized pieces and mix it into the pasta or serve it on top.
