  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar for caramel
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • pinch of flaky sea salt
  • 1/2 cup granulated sugar for crumble
  • 2 and 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp ground cloves
  • 1/4 cup salted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 and 1/2 tbsp granulated sugar
  • 1/2 cup + 1 tbsp all-purpose flour
  • 3/4 tsp cinnamon
  • pinch of salt

Instructions

  1. Preheat oven to 365°F (185°C). Prepare cookie sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add vanilla and eggs, mixing until just combined. Gradually add flour, baking soda, baking powder, spices, and salt until a dough forms. Chill for 30 minutes.
  3. While the dough chills, prepare the apple filling by cooking diced apples with butter, apple cider (or lemon juice), brown sugar, and spices over medium heat for about 15 minutes until tender.
  4. For the salted caramel sauce, melt sugar and butter in a saucepan until golden brown; stir in cream and sea salt.
  5. Scoop chilled dough onto prepared sheets and bake for 10-12 minutes until edges are set. Make indents in cooled cookies to fill with apple mixture.
  6. Top with crumbles from melted butter mixed with remaining toppings before drizzling with caramel.
