  • 4 large apples, peeled and diced
  • 1/4 cup salted butter, cubed
  • 2 tbsp apple cider or 1 tsp lemon juice
  • 1/2 cup packed brown sugar
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar for caramel
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt
  • 1/2 cup granulated sugar for crumble
  • 2 and 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp ground cloves
  • 1/4 cup salted butter, melted
  • 1/4 cup packed light brown sugar
  • 1 and 1/2 tbsp granulated sugar
  • 1/2 cup + 1 tbsp all-purpose flour
  • 3/4 tsp cinnamon
  • Pinch of salt

Instructions

  1. Make the cookie dough by creaming softened butter with sugars until light and fluffy. Mix in eggs and vanilla, then gradually add dry ingredients. Chill dough for 30 minutes.
  2. Prepare the apple filling by cooking diced apples with butter, brown sugar, and spices until tender.
  3. Create the salted caramel sauce by melting sugar until golden; add butter and cream, then cool slightly.
  4. Roll chilled dough into balls and bake at 365°F (185°C) for 10-12 minutes.
  5. After baking, create an indent in each cookie to fill with apple mixture and drizzle with salted caramel.
