  • 1 large egg
  • 1/2 cup light brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt (or to taste)
  • 3/4 cup semi-sweet chocolate chips (for sprinkling)
  • 1 1/2 cups sweetened shredded coconut
  • two-thirds of one 14-ounce can sweetened condensed milk (about 10 ounces)
  • 4 to 5 ounces salted caramel sauce
  • 3/4 cup semi-sweet chocolate chips (melted for drizzling)

Instructions

  1. Preheat your oven to 350°F and spray a 9-inch pie dish with cooking spray.
  2. Melt the butter in a microwave-safe bowl. Once melted, let it cool slightly before adding the egg, brown sugar, and vanilla extract; whisk until smooth.
  3. Stir in flour and salt gently until just combined.
  4. Pour the batter into the prepared pie dish and bake for 10-12 minutes until edges are firm.
  5. Remove from oven and sprinkle chocolate chips evenly over the crust.
  6. Add sweetened shredded coconut followed by drizzling condensed milk and salted caramel sauce on top.
  7. Return to oven for another 25 minutes until bubbly around the edges.
  8. Allow to cool completely before drizzling with melted chocolate.
