  • 2 acorn squash
  • ½ pound ground turkey or chicken
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (cleaned and chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • ½ teaspoon fresh minced thyme
  • 2 sage leaves (minced)
  • 1 teaspoon minced fresh rosemary
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F.
  2. Halve the acorn squash and scoop out the seeds; place cut-side down on a parchment-lined baking sheet. Bake for about 20 minutes.
  3. In a skillet over medium heat, sauté ground turkey until fully cooked; remove from pan.
  4. Add olive oil and sauté onions until softened (4-5 minutes).
  5. Toss in kale, garlic, celery, and apple; cook until tender.
  6. Mix in cooked turkey and scoop out some squash flesh to add to the filling.
  7. Generously fill each squash half with the mixture and return to oven for another 15 minutes.
  8. Top with feta cheese and nuts; bake for an additional five minutes.
