  • 3 1/2 cups grated zucchini (well-drained)
  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box (8.5 ounces) corn muffin mix

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and drain well to remove excess moisture.
  3. In a large mixing bowl, combine the drained zucchini with chopped onion, half of the cheddar cheese, corn, jalapeño, eggs, garlic powder, cumin, salt, black pepper, and corn muffin mix. Mix until well combined.
  4. Transfer the mixture to a greased baking dish and top with remaining cheddar cheese.
  5. Bake for approximately 50 minutes or until golden brown on top.
  6. Allow cooling for about 10 minutes before slicing and serving.
