  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter (room temperature)
  • 1½ cups granulated sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • ½ cup raspberry preserves (slightly warmed)
  • 2 cups sweetened shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your dome pan, dusting it with flour.
  2. In one bowl, whisk together flour, baking powder, and salt. In another bowl, cream the butter and sugar until fluffy.
  3. Add eggs one at a time along with the vanilla extract. Alternate adding dry ingredients and milk until just combined.
  4. Pour half the batter into the pan, dollop warmed raspberry preserves on top, then cover with remaining batter and swirl gently.
  5. Bake for 45-55 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
