  • 1 lb chicken breast or shrimp (sliced or peeled/deveined)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning
  • 1½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Fresh parsley or cilantro, chopped
  • Juice of ½ lime

Instructions

  1. Cook the penne pasta in salted water until al dente (about one minute less than package instructions). Reserve ½ cup of pasta water before draining.
  2. Season chicken or shrimp with salt, pepper, and Cajun seasoning. Sear in a skillet with olive oil until cooked through; set aside.
  3. In the same skillet, add olive oil and butter. Sauté bell peppers and garlic until tender (3–4 minutes).
  4. Stir in remaining Cajun seasoning and heavy cream; simmer gently. Add Parmesan cheese until smooth.
  5. Combine cooked pasta and protein into the sauce, adding reserved pasta water as needed for consistency.
  6. Garnish with fresh herbs and lime juice before serving.
