Ingredients

Scale
  • 2 ribeye or sirloin steaks (8 oz each)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional, for extra flavor)
  • 1/2 cup fresh parsley, packed
  • 1/4 cup fresh cilantro
  • 1 tablespoon fresh oregano (or basil)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple vinegar (or apple cider vinegar)
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (optional, for heat)
  • 2 large sweet potatoes, peeled and cut into chunks
  • 1/4 cup unsalted butter (or olive oil for dairy-free)
  • 1/2 cup heavy cream or milk (or coconut milk for a dairy-free option)
  • 1/4 teaspoon cinnamon (optional, for extra flavor)

Instructions

  1. Start by peeling and chopping your sweet potatoes into chunks. Boil them in salted water until they are tender—this usually takes about 15-20 minutes.
  2. While the sweet potatoes are cooking, season your steaks with salt, pepper, and optional garlic powder. Heat olive oil in a skillet over medium-high heat. Sear each steak for about 4-5 minutes per side for medium-rare.
  3. In a blender or food processor, combine fresh parsley, cilantro, oregano (or basil), lemon juice, extra virgin olive oil, apple vinegar, minced garlic, chili flakes (if using), salt, and pepper. Blend until smooth.
  4. Once your sweet potatoes are fork-tender, drain them and return them to pot. Add butter (or olive oil), cream (or coconut milk), salt, pepper, and optional cinnamon. Mash until smooth and creamy.
  5. Serve each steak with a generous drizzle of green sauce on top alongside a scoop of fluffy mashed sweet potatoes.
