  • ½ cup vegetable oil
  • ⅓ cup granulated sugar
  • 2 cups Krusteaz Pancake Mix
  • 1 cup chopped strawberries
  • ¾ cup powdered sugar
  • ⅛ teaspoon strawberry extract
  • 23 tablespoons non-dairy cream or coconut cream
  • 12 drops red food coloring (optional)

Instructions

  1. Preheat your oven to 350°F and prepare a loaf pan with nonstick spray.
  2. Mash the banana in a large bowl until smooth.
  3. Stir in eggs, water, 1 teaspoon vanilla extract, and vegetable oil until well combined.
  4. Add sugar and pancake mix, stirring gently until just combined.
  5. Fold in chopped strawberries and pour the batter into the prepared pan.
