  • 1.5 lbs boneless, skinless chicken breasts

  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • 4 ears of corn
  • 2 tbsp butter, melted
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup crumbled cotija cheese
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • 1/4 tsp chili powder (optional, for extra heat)
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 avocado, diced
  • Hot sauce, to taste (optional)
  • Lime wedges, for serving

Instructions

  1. Prepare the chicken by seasoning cubed chicken breasts with olive oil and spices.
  2. Cook the chicken in a skillet over medium-high heat until golden brown and cooked through (about 5-7 minutes per side).
  3. Cook the corn using your preferred method; then mix with mayonnaise, sour cream, cotija cheese, cilantro, lime juice, and chili powder.
  4. Rinse the rice under cold water and cook it with water and olive oil until fluffy.
  5. Assemble bowls with rice at the base topped with seasoned chicken, street corn mixture, black beans, and diced avocado.
