  • 1 1/2 English cucumbers (about 3 cups, halved and sliced)
  • 2 cups rotisserie chicken (chopped)
  • 1/4 cup minced cilantro
  • 3 green onions (sliced)
  • 1 jalapeno (seeded and diced)
  • 1/4 red onion (diced)
  • 1/2 red bell pepper (seeded and diced)
  • 15.25 oz can sweet corn (drained)
  • 1/2 cup plain Greek yogurt
  • 1/3 cup mayonnaise
  • zest and juice of 1 lime
  • 1 clove garlic (minced)
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp each salt and freshly cracked pepper

Instructions

  1. Prepare cucumbers by laying slices on paper towels to absorb moisture.
  2. In a medium bowl, whisk together Greek yogurt, mayonnaise, garlic, lime juice and zest, chili powder, cumin, salt, and pepper until smooth.
  3. In a large bowl, combine dried cucumber slices with corn, chopped chicken, cilantro, green onions, jalapeno, red onion, and red bell pepper. Gently fold together.
  4. Pour the dressing over the mixture and fold until everything is well-coated.
  5. Chill before serving for enhanced flavor.
