  • 2 tbsp butter (plus extra for bread)
  • 1 tbsp olive oil
  • 1 shallot, finely chopped
  • 2 cups mushrooms (Portobello, Cremini, or Shiitake, sliced)
  • 1 tsp thyme (fresh or dried)
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 4 slices Swiss cheese (or Gruyère)
  • 8 slices bread (Rye, Sourdough, or Artisan)

Instructions

  1. Heat a dry skillet over medium heat. Add sliced mushrooms and cook undisturbed for 5–7 minutes until moisture evaporates.
  2. Add butter, olive oil, and chopped shallots; sauté for another 5 minutes until mushrooms are golden brown.
  3. Stir in thyme and optional balsamic vinegar; season with salt and pepper.
  4. Butter one side of each slice of bread. On the unbuttered side, layer Swiss cheese followed by mushroom mixture and additional cheese before topping with another slice of bread (buttered side up).
  5. Cook sandwiches in a skillet or panini press over medium heat for about 2–3 minutes per side until golden brown and crispy.
