  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • optional fresh cilantro and lime wedges

Instructions

  1. Cook the rice according to package instructions using water or chicken broth for added flavor.
