  • 1/2 cup melted coconut oil
  • 1/2 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup chocolate chips

Instructions

  1. In a mixing bowl, combine melted coconut oil, pumpkin puree, brown sugar, and white sugar until well mixed.
  2. Add flour, pumpkin pie spice, salt, and baking soda. Mix until smooth and slightly sticky dough forms.
  3. Fold in half of the chocolate chips before chilling the dough in the fridge for at least an hour.
  4. Preheat the oven to 325°F (163°C) and line a baking tray with parchment paper.
  5. Scoop tablespoon-sized amounts of dough onto the tray, flatten slightly, and top with remaining chocolate chips.
  6. Bake for 12-14 minutes until edges are golden but centers remain soft.
  7. Cool on the baking sheet for a few minutes before transferring to a wire rack.
