  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 23 tbsp milk

Instructions

  1. Preheat your oven to 350°F and grease three 8-inch round cake pans.
  2. Whisk together flour, baking powder, and salt in a medium bowl.
  3. In a large bowl, cream softened butter and sugar until fluffy. Add eggs one at a time followed by vanilla and melted white chocolate.
  4. Gradually mix in the dry ingredients alternately with milk until just combined.
  5. Divide batter among prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool completely on wire racks.
  6. For the raspberry filling, cook raspberries, sugar, and lemon juice over medium heat until broken down; stir in cornstarch mixture until thickened and cool completely.
