  • 23 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn kernels, drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded Mexican cheese blend, divided
  • 1 large bag (9.25 oz) Nacho Cheese Doritos, lightly crushed

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef with diced onion and minced garlic until no longer pink; drain excess fat.
  3. Stir in taco seasoning, black beans, corn, and diced tomatoes; simmer for about 2-3 minutes.
  4. In a separate bowl, mix cream of mushroom soup with sour cream until smooth.
  5. Layer half of the meat mixture in the greased dish followed by half of the creamy mix, one cup of cheese, and half of the crushed Doritos; repeat layers.
  6. Cover with foil and bake for 15 minutes; uncover and bake for an additional 10 minutes until bubbly.
  7. Let rest for 5-10 minutes before serving.
